About this wine
Character
The Chablis 1er Cru La Fourchaume «Dédé» 2023 is a dry Chardonnay from Burgundy, grown on a 0.28-hectare parcel in the historic part of the La Fourchaume climat. It already shows an open, charming character, yet carries the substance of a long-distance runner that will reward further cellaring.
Terroir and origin
La Fourchaume is one of Chablis's Premier Cru climats. This wine comes from its historic core, home to the estate's oldest vines, planted in the early 1960s. The estate's vineyards are rooted in Kimmeridgian limestone. Romain and Damien Bouchard are based in the heart of Chablis, in a 19th-century property once inhabited by the monks of Pontigny.
Grape variety and vinification
Pure Chardonnay, hand-harvested and aged for 14 months in oak barrels. In the cellar, wild yeasts work without intervention; the grapes pass through a 450-square-metre gravity-flow cellar, where gravity replaces every pump. The wine is unfined, with only gentle filtration at the end.
On the palate
The nose offers delicate fruit of pear, quince and citrus, alongside exotic hints of honeydew melon and mango, white blossom, light tobacco and vanilla from the small oak barrel. On the palate, mouth-watering acidity is cleanly woven into the ripe fruit richness, accompanied by a saline note and pronounced minerality with a fine flint character. 13.5% ABV.
Distinctive features
The name honours André Tremblay, known as Dédé, the grandfather and pioneer who founded the estate. In 2015, the Bouchard brothers converted the entire estate to organic viticulture, and since 2017 biodynamic principles have guided their work.
