About this wine
Character
A generous Champagne with rich stone fruit: fully ripe pear, soft apple and quince, joined by a touch of dried fruit, brioche dough and freshly baked croissant. Yellow peach, physalis and a hint of kumquat follow, while verbena, basil and lemon balm add herbal freshness, and pecan lends depth.
Terroir and origin
The grapes come from several regions of Champagne: the Vallée de la Marne, the Coteaux du Vitryat, the area around Épernay and parts of the Côte des Blancs. The soils are chalky and clay-rich, with vine age averaging between 15 and 40 years. The plots are farmed organically, with some still in conversion. The house of De Sousa is based in Avize, at the heart of the Côte des Blancs.
Grape variety and vinification
A blend of 50% Chardonnay, 30% Pinot Noir and 20% Meunier. Hand-harvested, gentle pressing, spontaneous fermentation and ageing exclusively in stainless steel tanks. Unfined and unfiltered. Around 40% reserve wines provide balance and continuity, with a dosage of approximately 5 g/l.
On the palate
Juicy entry with plenty of apple, pear and quince, the mousse present and finely woven, the texture soft and lightly sweet-seeming. Against this stands a distinctly citrus-driven acidity and a chalky-saline minerality. The phenolics are fine, lending grip and holding the wine together.
Food pairings
With ash-coated goat cheese and tomato confit, with pan-fried sea bream with bacon-wrapped green asparagus, and with saddle of rabbit with Swiss chard.
Special features
De Sousa is regarded as a pioneer of biodynamic viticulture in Champagne: organic certification in 2010, Demeter certification in 2013, whose logo appears on the label. The soils are ploughed using the horses Vidoc and Capucine to avoid compaction and encourage deeper rooting into the chalk.
