About this wine
Character
Georges Laval's Cumières Premier Cru LMC21 is bottled as Brut Nature, meaning without any dosage. What remains is a lean, very dry Champagne with clear contours, where the carbonation carries the fruit rather than masking it. In the glass, pale gold with greenish hues. The magnum format slows its maturation even further.
Terroir and origin
Cumières lies on the right bank of the Marne, a few kilometres northwest of Épernay; the south-facing slopes above the river are classified Premier Cru. The Laval family has lived in the village since 1694 and farms 2.5 hectares across seven named parcels, including Les Chênes on pure chalk and Les Hautes Chèvres, which is ploughed with horses. The average vine age exceeds 30 years, with the oldest vines over seven decades old.
Grape variety and vinification
Chardonnay and Pinot Meunier: acidity and chalky drive from one, round fruit from the other. Pressing takes place in a traditional Coquard vertical press with a 2,000-kilogram capacity, the legal minimum for Champagne houses; the must runs off without applied pressure. Fermentation is carried out by wild yeasts in used barrels, and bottling follows ten months later, with no fining, no filtration, and no cold stabilisation. 12.5% by volume.
On the palate
On the nose, lemon zest, green apple and yellow pear, joined by white blossom and a note of bread dough from time on lees. The palate stays taut, acidity leads the way, the mousse is fine and creamy, and the finish lingers saline and chalky.
Food pairings
With oysters, sashimi and smoked salmon, as well as with sole in butter. For cheese, aged Comté is an excellent match.
Special features
Organic-certified since 1971, after Georges Laval read an article about pesticide traces found in Arctic ice. Vincent Laval has run the cellar since 1996, and the estate's annual production ranges between 8,000 and 10,000 bottles.
