About this wine

Character

A bright, juicy Chablis that relies on salinity and richness rather than sheer body. The nose, still a touch restless shortly after bottling, settles to reveal ripe green fruits, lime zest, lemon juice and salted lemon, along with herbs, a touch of yeast, a hint of oak and a whisper of pineapple. Pale lemon yellow in the glass.

Terroir and origin

The wine comes from a 0.57-hectare parcel in the Grand Cru Vaudésir, planted in 1992 by Romain and Damien Bouchard's father, precisely at the spot of the famous, deeply carved valley of Vaudésir. The estate's vines are rooted in Kimmeridgian limestone.

Grape variety and vinification

Pure Chardonnay. After hand-harvesting, a slow whole-cluster pressing follows, after which the wine ferments spontaneously with wild yeasts in used tonneaux, where it is also aged. Before bottling, a coarse filtration and light sulphuring are applied, with no fining. The work takes place in a 450-square-metre gravity-flow cellar beneath the estate, where no pump is needed.

On the palate

Fine, bright juiciness, along with richness, density and silkiness. Creamy and citrusy at once, with a note of pineapple. The finish stays saline and juicy, with herbs and subtly integrated oak. 13.5% vol., dry.

Special features

Romain and Damien Bouchard founded Domaine de l'Enclos in 2016, after selling the family's négociant house while keeping the 29 hectares of vineyards. The estate is based in a 19th-century property, once home to the monks of Pontigny. The estate has farmed organically since 2015, with biodynamic principles woven in since 2017; the wines rest on fine lees for up to 18 months.
