About this wine
Character
A champagne that works through salt, smoke and tension rather than fruit. As an Extra Brut, it is bottled with minimal dosage, which lays bare its cool, stony core. The half bottle shows it especially focused and fresh.
Terroir and origin
Talus-Saint-Prix lies between the Côte des Blancs and the Côte de Sézanne; the five hectares are spread across south-facing slopes above the Petit Morin. The soil is rich in silex, the flint once quarried for millstones: the "meulière" that gives the cuvée its name.
Grape variety and vinification
A cuvée of Pinot Meunier, Pinot Noir and Chardonnay from vines averaging 40 years old; in the vineyard, Pinot Meunier accounts for over half the plantings. The grapes are hand-pressed, and fermentation starts spontaneously. Ageing takes place in steel tanks, glazed concrete and oak barrels at least ten years old, so that no oak note masks the terroir. Before disgorgement, the bottles age for two to seven years in the chalk cellar.
On the palate
Taut and lively, with flint and lemon zest on the attack, followed by yellow apple and meadow herbs. The acidity carries the wine, its texture staying saline and spicy through a long finish.
Food pairing recommendations
A wine for iodine-tinged, clean dishes: oysters, sashimi, briefly seared scallops. A creamy porcini risotto also gains from its taut acidity.
Special features
Cyril Jeaunaux and Clémence Robin have run the estate since 1999 and have consistently converted it to biodynamic farming, supported since 2013 by consultant Jacques Mell. Cyril is a member of the winegrowers' association Terres et Vins de Champagne.
