About this wine

Character

A Champagne where terroir matters more than the fizz: single vineyard, no dosage, long lees ageing. Taut, saline, mineral.

Terroir and origin

Les Chênes, meaning "the oaks", lies in the eastern part of Cumières, between the roads to Ay and Hautvillers, below the abbey. The parcel offers optimal conditions: mid-slope, south-facing, chalk subsoil beneath a thin layer of loamy-silty soil. Cumières sits on the right bank of the Marne, a few kilometres northwest of Épernay, and is classified Premier Cru.

Grape variety and vinification

Pure Chardonnay. Pressing takes place in a traditional vertical Coquard press with a 2,000-kilogram capacity, the smallest in the region: the grapes are pressed slowly, the must runs off without pressure. Fermentation is carried out by wild yeasts in used barrels; bottling follows after ten months, with no fining, no filtration, no cold stabilisation. Brut Nature means: no dosage. The single-vineyard cuvées age 50 months and longer on the lees.

On the palate

The nose shows sea air, lemon, oyster shell and smoke, with amontillado sherry and toasted almonds behind. With no dosage it comes across taut and pronounced, the salinity sets the palate watering, while carrying plenty of power. Citrus notes and saline hints linger long on the tongue. Pure umami.

Food pairings

Anything from the sea: oysters, scallops, sole, lobster, as well as sushi and sashimi.

Special features

The Laval family has lived in Cumières since 1694. In 1971 Georges Laval changed his working methods after reading about pesticide residues found in Arctic ice; Vincent Laval has run the cellar since 1996. From 2.5 hectares of Premier Cru spread across seven named parcels come 8,000 to 10,000 bottles a year, with an average vine age of over 30 years. This magnum comes from a single parcel.
