About this wine
Character
A Champagne of great power and equally great precision, carried by tension and vitality. Zero dosage makes it uncompromisingly dry, and in its youth it appears almost austere. It only truly opens up after five to six years; anyone opening it now should decant it.
Terroir and origin
The Les Chênes parcel lies in the eastern part of Cumières, not far from the road to Aÿ and below the abbey of Hautvillers, on a mid-slope facing south. Beneath a thin layer of clay and silt lies pure chalky limestone. It has been farmed organically and biodynamically since 1971. The Laval family has lived in the village since 1694 and holds 2.5 hectares of Premier Cru across seven parcels.
Grape variety and vinification
Pure Chardonnay, pressed on a traditional vertical Coquard press with a capacity of 2,000 kilograms, the region's legal minimum. Fermentation with wild yeasts, eight months' ageing in used barrels, then three years sur lattes. Disgorged on 25 April 2023 at 0 g/L, meaning without any dosage.
On the palate
On the nose, pulverised limestone and chalk, mint and verbena, fresh and ripe citrus with grapefruit and lime zest. On the palate, immense power and a pulsing minerality reminiscent of chalky soil dissolved in lemon juice, with a winy, complex core.
Food pairing suggestions
Smoked trout in a buttermilk-lemon jus with chervil and warmed yellow pepper, steamed char with citron and almonds in bay-leaf milk, or tagliatelle with wild fennel, clams, saffron and sea urchin.
Special features
Only 1,727 bottles and 30 magnums, half of the previous vintage: late frost in April and hailstorms in August took their toll on the harvest. Bottled without fining or filtration, sulphur levels are usually below 20 milligrams per litre.
