About this wine
Character
A white Burgundy with a bright, electrifying opening. Intense straw yellow in the glass, with lime and lemon with peel and pip, smoke and flint, green apple, herbs and limestone on the nose, topped with notes of white blossom.
Terroir and origin
The Sous La Velle vineyard lies close to the village of Saint-Romain and borders Sous le Château to the north. It faces south-east and sits at 355 to 380 metres. The vines are rooted in colluvial soil over Saint-Romain marl limestone. The Buisson family farms its 13 hectares in Saint-Romain, Santenay and Beaune biodynamically, ever since Henri introduced this approach in 1990.
Grape variety and vinification
Chardonnay from 60-year-old vines. Hand-harvested, whole-cluster pressing, spontaneous fermentation in wood; malolactic fermentation likewise proceeds spontaneously in barrel. Ageing lasts ten to twelve months in barriques and tonneaux of 228, 350 and 500 litres, of which at most ten percent are replaced each year. Fined with bentonite, filtered only very lightly.
On the palate
Energetic, tonic, juicy and intense. Citrus fruit and green stone fruit remain present, carried by a crisp, lively acidity. The minerality is fed by the old vines; add to that subtle oak, a touch of smoke and a fine creaminess in the texture. 12.5% vol., dry.
Food pairings
With pan-seared salmon with horseradish, mustard potatoes and lime wedges, with oven-roasted asparagus with miso hollandaise and sesame and with gratinated oysters with Meyer lemon juice.
Special features
Sulphur is added only at bottling, with a maximum of 40 to 50 mg/l total sulphite. During ageing the wine is tasted daily, and the barrels are racked whenever Frédéric Buisson deems it appropriate.
