About this wine
Character
A floral-toned, translucent Pinot Noir. The nose leads with rose blossom and wild rosehip, followed by sweet and sour cherries and a touch of blood orange zest, with undergrowth and blond tobacco beneath. Nothing pushes to the fore.
Terroir and origin
Combe Bazin lies in the south-eastern part of the Saint-Romain appellation, towards Auxey-Duresses, at 360 metres and facing south-east. The soil is white limestone, known as calcosol on Saint-Romain marl. The vines growing there are 30 years old.
Grape variety and vinification
Pure Pinot Noir, hand-harvested and partially destemmed. Fermentation took place spontaneously in stainless steel vats, the cap was worked by punch-downs and pump-overs, and malolactic fermentation began spontaneously in barrel. Ageing lasted ten to twelve months in 228, 350 and 500-litre barriques as well as tonneaux, of which at most 10% are replaced each year. Frédéric Buisson tasted daily and racked the barrels whenever he judged it necessary. The wine was fined with bentonite, filtered only very lightly, and sulphured only at bottling, with a maximum of 40 to 50 mg/l total sulphite.
On the palate
The transparency of the nose carries through: floral notes, above all red fruit, alongside undergrowth. The tannin still feels a touch rough, the acidity lively, the wine linear and fresh, with a touch of warmth and austere notes on the finish.
Food pairing suggestions
Grilled Pata Negra pluma with gratin dauphinois, pumpkin risotto with cinnamon, or a chicken liver and pork terrine with mixed leafy greens.
Distinctive features
Henri Buisson introduced biodynamic farming in 1990, at a time when it was still considered eccentric. The family farms 13 hectares across Saint-Romain, Santenay and Beaune, with Gilles Buisson vinifying with minimal intervention.
