Innoble Les Tres Serres RP20 Reserva Perpètua Brut Nature

The Innoble Les Tres Serres RP20 Reserva Perpètua Brut Nature is a sparkling wine made from pure Xarel·lo, bottled by Gramona with no dosage. Its tension comes not from primary fruit but from the spicy, saline, deep character of this grape variety.

The Batlle i Gramona family has been farming vines since 1850 in the limestone soils shaped by fossil deposits of Sant Sadurní d'Anoia in Penedès. As early as 2000 the family converted its entire 150 hectares to organic farming; Javier Gramona and his team see the vineyards as a living ecosystem in which every intervention is carefully considered. For the Reserva Perpètua, reserve wines drawn from the very same parcels have been built up over the years.

Each vintage's Xarel·lo goes into large foudres of 3,000 to 6,000 litres, where it ages for years. The final blend combines the current vintage with a substantial proportion of these reserve wines. After bottle fermentation, the wine rests 73 months on the lees and is finished with 0 g/l dosage.

On the nose, grilled pineapple and cantaloupe melon meet toasted hazelnuts, almonds and freshly cut macadamia nuts, alongside mandarin, grapefruit and bitter orange zest and freshly cut ginger. On the palate, apple, pear, quince and white peach define the fruit, which yields to a saline, mineral structure. The mousse stays creamy, the acidity lively, and the finish leans on purity and pleasantly subtle bitter notes. The aftertaste grows brighter and finer, linear and maritime.

Brut Nature here truly means no dosage. At 12.0% ABV, the wine remains light on its feet, and the label carries the Demeter logo.
