About this wine

Character

Les Fontaines is a rosé Champagne made from pure Pinot Noir, whose colour is not decoration but a statement about how it's made. Bright, transparent cherry red, lively perlage, and fruit that sits deep rather than upfront. A Champagne with drive and substance.

Terroir and origin

The vines grow on the chalky soils of the Côte des Bar, in the south of Champagne. Raphaël Piconnet and his wife Hannah took over the family estate in Neuville-sur-Seine in 2015 and immediately converted to organic farming. Their eight hectares in Neuville-sur-Seine and Gyé-sur-Seine are vinified plot by plot, following the principle: one plot, one wine.

Grape variety and vinification

Pure Pinot Noir from the 2022 vintage, not declared on the label. The rosé is a blend of white-pressed Pinot Noir and saignée. The base wine fermented roughly 60% in barrel and 40% in stainless steel, with wild yeasts, before ageing in Burgundian pièces. It is bottled without fining, without filtration and with minimal sulphur, spending at least 24 months on the lees. Disgorged in February 2025 with zero grams of dosage — Brut Nature in the truest sense.

On the palate

The opening is fresh, juicy and vigorous, then the Champagne turns more wine-like, the texture silky, the mousse elegant. Red fruit and citrus meet very fine tannin and pleasant spice, with a light salinity appearing on the finish. Despite the saignée component, this rosé drinks well on its own, though its strength lies in pairing with food.

Special features

All de Bichery Champagnes are bottled without dosage. The magnum format slows ageing and keeps this Pinot Noir's tension intact for longer.
