About this wine
Character
A dry white wine at 12.0% Vol. that favours tension over weight. Here Molette shows a restrained, clear aromatic profile, carried by acidity and a saline, stony note. Youthful, precise, with no sweetness at all on the finish.
Terroir and origin
In 2006, Philippe Héritier cleared abandoned steep slopes near Frangy in Haute-Savoie, where he now farms five hectares. The indigenous varieties Altesse and Mondeuse grow on glacial moraine. A trained agricultural engineer, he previously worked as a manager at Crédit Agricole; his grandfather owned vines in Frangy, his father bred snails.
Grape variety and vinification
Molette is a traditional Savoyard variety, used mainly as a base for sparkling wine and rarely found as a still wine. At the estate, Héritier works exclusively with wild yeasts and minimal sulphur; he treats his vines with herbal teas and biodynamic preparations. The cellar is a hexagonal room built to the golden ratio, designed with an architect and a geobiologist, inspired by the ancient theatre of Epidaurus.
On the palate
Fresh and lively: green apple and pear, with lemon zest and white blossom, a hint of almond in the background. The acidity keeps the wine lean and taut, a subtle creaminess fills out the midpalate, and the finish stays mineral and dry.
Food pairing
Pairs well with trout and whitefish, with poached sea fish and goat's cheese. Also good with a salad with walnut-oil vinaigrette or as an apéritif.
Highlights
Héritier prefers to call himself a farmer rather than a winemaker: alongside viticulture, he raises 300,000 snails a year, Gros-gris, fed on clover, flax and mustard. His customers include Michelin-starred chefs Marc Veyrat, Jean Sulpice and Yoann Conte.
