About this wine
Character
A lusciously sweet red wine whose sweetness never feels heavy. The 120 to 140 grams of residual sugar are balanced by a spicy tannin and a herbal freshness that keeps the wine lively. At 13.5% ABV, it remains agile despite the concentration from the drying process.
Terroir and origin
The grapes come from the terraced hillsides of the Marano Valley, where Cà la Bionda farms 29 hectares. The vineyards lie at 150 to 300 metres, facing east to southeast, on soil strongly marked by stony, calcium-rich limestone.
Grape variety and vinification
70% Corvina, 20% Rondinella and 10% Corvinone. The grapes were dried in small wooden crates until the end of February, until the residual sugar reached 120 to 140 grams. After fermentation in steel tank, the wine remained on the skins for 20 days, followed by 24 months in barrique.
On the palate
The wine comes across as sweet and refreshing at once. On the nose, black cherries and dark chocolate lead, alongside elderberry syrup, blackberry compote and candied lavender. Bergamot, wild mint, rosemary, thyme and sage run through the sweetness. The spicy tannin brings bitter notes of black tea and dark chocolate.
Food pairings
It pairs well with chocolate-based dishes, cheese and cigars.
Special features
Cà la Bionda was founded in 1902; Alessandro and Nicola Castellani now run the estate in its fourth generation, with Alessandro in the cellar and Nicola in the vineyards. The estate has farmed organically since 2012, and Brogna sheep, an endangered breed from the Veneto, graze between the vine rows. The brothers are among the founding members of FIVI.
