About this wine
Character
A bone-dry sparkling wine from Southern Styria that translates its long maturation not into opulence, but into pure tension. Bright straw yellow with luminous reflections, a persistent perlage, understated fruit, and a saline backbone.
Terroir and Origin
The vines are situated in Ehrenhausen on blue and brown calcareous marl soils, with vine ages ranging between 20 and 55 years. Manfred Tement has run the estate since 1976; today his sons Armin and Stefan work alongside him, with Armin overseeing the viticulture and cellar. The conversion to biodynamic farming began in 2017.
Grape Variety and Vinification
85% Morillon (Chardonnay) and 15% Weissburgunder (Pinot Blanc). The base wine fermented spontaneously and matured for 50 months in neutral oak casks, followed by a further 30 months on the lees in the bottle. It was bottled without added sulphur, disgorged in April 2022, and received zero dosage: Brut Nature with 0.7 grams of residual sugar, 12.0% ABV.
On the Palate
On the nose, lime zest, Granny Smith apple peel, and lemon balm, opening up with time in the glass to reveal apricot kernels, salted buttered toast, and greengage jam. The attack is taut and energetic, crystal-clear, with the fruit remaining restrained, leading into a saline, lingering finish.
Food Pairings
Goat's cheese crostini with gooseberry and tarragon confit and long black pepper, cured swordfish ham with orange and sage vinaigrette, or scaloppine al limone.
Key Facts
A total of more than six years of ageing prior to disgorgement, combined with zero dosage and no added sulphur: an uncompromising approach that yields a sparkling wine of tremendous clarity.
