About this wine

Character

A rosé sparkling wine that draws its tension not from red fruit but from chalk, herbal spice and salt. The nose stays bright, calm and very precise, while the palate is noticeably more generous and voluminous. The finish is cool, chalky and carried by a savoury spiciness.

Terroir and origin

The wine's home is Sant Sadurní d'Anoia in the Penedès, where the Batlle i Gramona family has cultivated vines since 1850. The soils are calcareous and threaded with fossil deposits, which explains the stony, cool character. In 2000 the family converted its 150 hectares to organic farming; Javier Gramona and his team see the vineyards as a living ecosystem.

Grape variety and vinification

Pure Pinot Noir, second fermentation in the bottle following the méthode champenoise. 28 months on the lees give the wine creamy depth and a subtly nutty undertone without dulling its freshness. Brut Nature means: no dosage, no added sugar. 12.0% vol.

On the palate

On the nose, apple skin, rosehip and macerated white currants, topped with dried herbs, chopped almond, a hint of green olive, plus fennel seed and coriander seed. On the palate the red fruit opens up more: wild raspberry, red apple, redcurrant. Beneath it, that fine bitterness of freshly peeled apples remains present, alongside saline minerality and a stony structure that keeps the wine lively.

Special features

The label carries the Demeter logo. Unusual for a rosé cava is its bright, cool aromatic profile: little overt fruit, but plenty of chalk, stone and Mediterranean herbs.
