About this wine
Character
A dry white wine made from Neuburger, a distinctive grape variety rarely encountered as a single-varietal bottling. At 12.0% ABV, it remains slender without feeling thin: the fruit is juicy, the texture creamy, and the drive crystal clear.
Terroir and Origin
Nikolaihof in Mautern is Austria's oldest wine estate, resting on the foundations of the Roman fort Favianis dating back to 63 BC. The Saahs family has cultivated the property since 1894, managing its 22 hectares of vineyards as a living organism: wild herbs between the rows, bees, and green lizards on the stone terraces.
Grape Variety and Vinification
Single-varietal Neuburger. The musts ferment spontaneously in the cellar; work is carried out in the Roman vaulted cellar, which houses a 350-year-old wooden beam press; the wines mature in large Slavonian oak casks. The estate has been working biodynamically under Demeter standards since 1971, avoiding rushed interventions.
On the Palate
On the nose, pure succulence: apricot, ripe pear, rhubarb, and orange peel, alongside ginger, delicate nutty hints, and abundant blossoms and herbs. On the palate, yellow fruit and fine acidity, defined in its youth by grip and delicate spice, underpinned by a creamy impression that lends suppleness. A wine that accompanies dishes with pleasant yet intense support.
Food Pairings
Pairs wonderfully with egg salad with curry and sesame-honey dressing and with cheese fondue — both vegetarian, both offering ample spice and richness to balance the acidity and suppleness of this wine.
Special Features
Nikolaihof is considered the oldest Demeter winery in the world and is the only certified biodynamic producer in the Wachau. The vineyard Im Weingebirge has been documented in records dating back to 470 AD.
