About this wine
Character
A white wine of crystalline clarity and filigree structure. The nose stays restrained and precise: yellow apple, ripe pear and white peach, followed by herbal spice and a fine nutty note. At 12.0% ABV, the wine remains light-footed without ever turning thin.
Terroir and origin
Nikolaihof is located in Mautern in the Wachau, on the foundations of the Roman fort of Favianis dating from 63 BC; the Im Weingebirge vineyard is documented as far back as 470 AD. The 22 hectares are farmed as a living organism: wild herbs growing between the vines, bees, and green lizards on the stone terraces.
Grape variety and vinification
A pure varietal Neuburger, an indigenous Austrian grape. The musts ferment spontaneously on-site in large Slavonian oak casks, where the wines are given plenty of time to develop. In the Roman vaulted cellar, a 350-year-old beam press made of oak timbers is still used.
On the palate
Dry, medium-bodied, with vibrant acidity and a fine mineral imprint. The texture stays gentle, the finish clear and long.
Food pairings
Viennese veal schnitzel, grilled pikeperch or grilled char with lemon thyme, alongside asparagus with hollandaise sauce or tossed in butter. Also pairs well with smoked trout fillet and young mountain cheese.
Special features
The Saahs family has run Nikolaihof since 1894, farming biodynamically under Demeter certification since 1971: Austria's first Demeter-certified estate and, to this day, the only certified biodynamic producer in the Wachau.
