About this wine
Character
This Riesling belongs to the Wachau's Federspiel category, meaning dry and medium-bodied, here at 12.5% ABV. The nose reveals initial mature notes, grapefruit, apricot, and vineyard peach, alongside honey and a hint of petrol. It displays density and depth from the very first sniff.
Terroir and Origin
The vines grow on loamy loess and Danube gravel terrain. Nikolaihof in Mautern is Austria's oldest winery, resting upon the Roman foundations of the castrum Favianis dating back to 63 BC. The Saahs family has cultivated the 22 hectares since 1894, working biodynamically under Demeter certification since 1971.
Grape Variety and Vinification
Riesling, fermented exclusively with natural, vineyard-indigenous yeasts, without added sugar, enzymes, flavour enhancers, or cultured yeasts. After aging for six months in large, old wooden casks, the wine was bottled on a fruit day.
On the Palate
Grippy spice and power, paired with a vivacity one might not expect from a moderate 12.5% ABV. The finish lingers with salinity, strength, and density. Abundant umami ensures this wine belongs at the dining table.
Special Features
Nikolaihof is considered the oldest Demeter winery in the world and remains the only certified biodynamic producer in the Wachau. A 350-year-old tree press still operates in the vaulted Roman cellar, while the musts ferment in large Slavonian oak casks.
