About this wine

Character

A youthful Wachau Riesling in Federspiel style, holding juiciness, fruit sweetness and vibrant acidity in perfect balance. At 12.0% ABV it stays lean, while a fine tannic note gives it a piquant edge. The wine is still right at the start of its development and promises good ageing potential.

Terroir and origin

The Riesling grapes grow on loess-loam and Danube gravel terrain. Nikolaihof in Mautern stands on the foundations of the Roman fort of Favianis from 63 BC and is regarded as Austria's oldest winery; the "Im Weingebirge" vineyard has been documented since 470 AD. The Saahs family has farmed the 22 hectares since 1894, biodynamically to Demeter standards since 1971.

Grape variety and vinification

Pure Riesling. Fermentation takes place without any addition of sugar, enzymes, flavour enhancers or cultured yeasts, using solely the grape's own natural yeast. This is followed by six months' ageing in large, old wooden casks, bottled on a fruit day.

On the palate

Radiant golden yellow with delicate green reflections. The nose is intense: citrus, green apple and apricot, joined by lemon balm, sage, cool mineral notes, subtle smoky hints and a touch of aniseed. Decanted vigorously, the mineral aromas emerge far more distinctly. On the palate it is juicy and dry, the acidity vibrant, the tannin fine and invigorating.

Food pairings

Trout, Wiener Schnitzel, asparagus with hollandaise sauce, and Asian dishes with lemongrass and ginger.

Special features

In 1971, Nikolaihof became Austria's first Demeter-certified winery and remains the Wachau's only certified biodynamic producer. In the Roman vaulted cellar, a 350-year-old tree press is still in operation, and the musts ferment spontaneously in large Slavonian oak casks. The 1995 Vinothek Riesling became, in 2014, the first Austrian wine to receive 100 Parker points.
