About this wine
Character
An archive wine from the 1987 vintage, released by the winery only in 2024. The colour is golden yellow with amber reflections, the bouquet calm and clear: dried quince, beeswax, and toasted hazelnut, complemented by candied orange peel and dried herbs.
Terroir and Origin
The grapes originate from the local area of Baumgarten, cadastral municipality of Mautern, which belongs to the Schlossberg vineyard site. Nikolaihof's cellar rests on the Roman foundations of the castrum Favianis dating back to 63 BC; the estate is considered the oldest winery in Austria. The Saahs family has been managing it since 1894.
Grape Variety and Vinification
Single-varietal Pinot Blanc, vinified dry, with 11.5% ABV. Nikolaihof has been farming biodynamically according to Demeter standards since 1971. The Roman vaulted cellar houses a 350-year-old tree press; the musts ferment spontaneously in large Slavonian oak casks, where some wines mature for a decade or longer.
On the Palate
Dry and silky, supported by a delicate acidity. Ripe pear and dried apricot are accompanied by a saline minerality, leading into a long-lasting finish of walnut, dried herbs, and dark honey.
Food Pairings
Mature mountain cheese, morel risotto, roasted quail.
Special Features
Library bottling in magnum, 2024 release. Nikolaihof was the first Demeter-certified winery in Austria, is considered the oldest Demeter winery in the world, and remains the only certified biodynamic producer in the Wachau. The 22 hectares are cultivated as a living organism, with wild herbs flourishing between the vines.
