About this wine
Character
A serious, dark-toned Pinot Noir from Burgundy, dry and moderate in alcohol at 12.5% Vol. Medium-density purple in the glass, pure and juicy in expression, at once sensual and taut. Of the domaine's wines, this is the one that needs the most time.
Terroir and origin
The parcel lies in Aux Coucherias just before Bouze-lès-Beaune, west-facing, very steep and defined by dark clay and limestone. It was planted in the 1950s; the clos, isolated by trees and gorse, is known to Boris Champy as Clos Montchovet. He came to know the vineyard during his time at Louis Jadot. The site has been farmed biodynamically since 1985.
Grape variety and vinification
Pinot Noir, planting density of around 10,000 vines per hectare, trained in guyot. Harvest took place in the first three days after 7 September, just before the heatwave. Boris Champy typically works here with around 50% whole clusters and ages the wine for twelve months in barrique. In the cellar, the domaine relies on spontaneous fermentation with native yeasts, gentle extraction and restrained use of oak.
On the palate
On the nose, first stems, then mushrooms and a touch of celery, spices and brown sugar. Behind that, ripe dark berries, plums and cherries, a hint of blackcurrant yogurt that fades quickly with aeration. On the palate, light extract sweetness and dark fruit intertwined with spice, fine-grained yet pronounced tannin, piquant bitter notes and a light salinity.
Distinctive features
Domaine Boris Champy in the Hautes-Côtes de Beaune became, in 1984, the first estate in Burgundy to be Demeter-certified, and has farmed biodynamically ever since; the Demeter logo appears on the label. At higher elevations, the grapes ripen a week later, which preserves freshness.
