About this wine
Character
A serious, dark-fruited Burgundy that gives spice and fruit equal weight. The nose opens with stems, mushrooms and a touch of celery, followed by spice and brown sugar, then ripe dark berries, plums and cherries. A hint of blackcurrant yoghurt fades quickly with air.
Terroir and origin
Aux Coucherias lies just before Bouze-lès-Beaune: a very steep, west-facing plot marked by dark clay and limestone, planted in the 1950s. Trees and broom bushes enclose the clos, which Boris Champy calls Clos Montchovet. Champy came to know the vineyard during his time at Louis Jadot.
Grape variety and vinification
Pure Pinot Noir from a plot farmed biodynamically since 1985, with a planting density of around 10,000 vines trained in Guyot. Harvested in the first three days after 7 September, just before the heatwave. In the cellar, Champy typically works this plot with around 50% whole-cluster fruit, spontaneous fermentation with natural yeasts and twelve months in barrique. 12.5% vol., dry.
On the palate
Pure and juicy, with light extract sweetness and dark fruit intertwined with spice. Powerfully built, the tannin fine-grained yet pronounced, with piquant, positively bitter notes and a subtle salinity. A wine that needs time.
Notable features
The label carries the Demeter logo. Domaine Boris Champy in the Hautes-Côtes de Beaune has farmed biodynamically since 1984 and was Burgundy's first Demeter-certified estate. Boris Champy took it over in 2019 from Didier Montchovet, following ten years at Dominus Estate in Napa Valley and stints with a Beaune négociant and at Clos des Lambrays. This bottle contains 3000 ml.
