About this wine

Character

A Coteaux Champenois, meaning a still wine from Champagne, and it comes across as open and direct: juicy red fruit, fine-grained texture, 12.0% vol. Easy-drinking without ever becoming generic. Glouglou at a high level.

Terroir and origin

The grapes come from Chamery on the Montagne de Reims, a village classified as Premier Cru. The topsoil consists of calcareous clay interspersed with limestone pebbles, while the subsoil is made up of sands and fossil shells. Cyril Bonnet farms just over ten hectares across around 50 parcels, with vines between 35 and 80 years old.

Grape variety and vinification

Pure Meunier from Chamery. The grapes were not destemmed, fermentation started spontaneously, ten days in sandstone eggs and 400-litre barrels, where the wine then aged for 13 months. It was bottled without the addition of sulphur. Since 2013, Cyril Bonnet has converted the estate to organic farming and, in the cellar, relies on spontaneous fermentation with wild yeasts and forgoes filtration.

On the palate

Fruit takes the lead: sweet cherry, plum and raspberry, along with yeast and a slightly lactic note. Juicy, lively, fine-grained in texture, while the stems provide structure.

Food pairings

Meat-filled dim sum, saltimbocca with Parma ham and sage or stuffed pumpkin with rice, cheese, harissa and toasted seeds.

Special features

This wine shows what Meunier from Chamery can do as a still wine, bottled without added sulphur. Bonnet-Ponson has existed since 1862, when Grégoire Bonnet founded one of the region's first récoltant-manipulant houses.
