About this wine
Character
A Champagne of great calm on the palate: mature, but never tired, complex yet immediately self-explanatory. Its fruit expresses itself through extract rather than youthful exuberance.
Terroir and origin
The grapes come from the house's best parcels in Verzenay and Chamery in the Montagne de Reims. The soils are clay-sandy, complemented by calcium-rich Campanian chalk. Chamery, the estate's seat, is classified as Premier Cru.
Grape variety and vinification
100 percent Pinot Noir from vines with an average age of 55 years. Bonnet-Ponson produces this Blanc de Noirs only in particularly great years. Cyril Bonnet relies on spontaneous fermentation with wild yeasts, forgoes filtration, and sulphites only in tiny amounts; each parcel is vinified separately. At this house, Extra Brut means a dosage of no more than five grams, just enough to round off the acidity. 12.0 percent alcohol.
On the palate
The entry is carried by a finely sparkling mousseux. Beneath it lie dried fruits, dried apricots and candied orange peel, joined by toasty notes of salted-butter shortcrust pastry and apricot jam, framed by mild spices. The crumbly texture gives the wine its richness, and the finish remains composed.
Special features
The 2007 vintage produced 1,200 magnums. The name honours Jules Bonnet, son of founder Grégoire Bonnet, who in 1862 established one of the region's first récoltant-manipulant houses; the house has carried its current name since the marriage of André Bonnet and Monique Ponson in 1957. Cyril Bonnet has converted the estate to organic farming since 2013.
