About this wine
Character
Here Boris Champy bottles a Pinot Noir that, when young, has a pronounced scent of stems. Behind that stand ripe black cherries, plums and blackberries, a slightly lactic note of creamy blackcurrant yoghurt, along with vanilla, liquorice and a touch of dark chocolate. In the glass, an intense purple.
Terroir and origin
The parcel in Aux Coucherias lies just before Bouze-lès-Beaune, faces west, is very steep and characterised by dark clay and limestone. Trees and broom shrubs isolate the clos, known at Boris Champy as Clos Montchovet. The 1er Cru was planted in the 1950s, and the parcel has been farmed biodynamically since 1985.
Grape variety and vinification
Pure varietal Pinot Noir, planting density of around 10,000 vines per hectare trained in Guyot. Harvested on 12 August, with Champy fermenting 60 percent of the grapes as whole clusters. This is followed by twelve months' ageing in barrique. 12.5% vol., dry.
On the palate
Juicy, lightly extract-sweet and creamy, with the texture of melted milk chocolate, alongside cinnamon, cherry and a touch of vanilla. This comes across as ripe and rounded, yet stays lively and energetic: the stems give the wine structure and edge.
Food pairings
Young wild boar terrine with wild herb salad and toasted brioche, beef tataki or porcini risotto with grated Mimolette.
Special features
Boris Champy has known this vineyard since his time at Louis Jadot. His estate in the Hautes-Côtes de Beaune has worked biodynamically since 1984 and was the first winery in Burgundy to be Demeter-certified; the Demeter logo appears on the label. Bottled in a 1500 ml magnum.
