About this wine
Character
A Beaune Premier Cru in intense purple: juicy, creamy and, despite its ripeness, full of energy.
Terroir and origin
The plot in Aux Coucherias lies just before Bouze-lès-Beaune, faces west and is very steep. Dark clay and limestone define the soil, while trees and gorse enclose the clos that Boris Champy calls Clos Montchovet. He already knew the vineyard from his time at Louis Jadot. It has been farmed biodynamically since 1985.
Grape variety and vinification
Pure Pinot Noir from vines planted in the 1950s, at a planting density of around 10,000 vines per hectare, trained in Guyot. Harvested on 12 August, fermented 60% as whole clusters, then aged twelve months in barrique. 12.5% ABV.
On the palate
The nose brings together stems, ripe black cherry, plum and blackberry, joined by a lactic note of creamy blackcurrant yoghurt along with vanilla, liquorice and a touch of dark chocolate. The palate opens juicy and lightly extract-sweet, with a texture as creamy as liquid milk chocolate, accompanied by cinnamon and cherry. It comes across as ripe and rounded, yet stays lively; the stems provide structure and edge.
Food pairings
Young wild boar terrine with wild herb salad and toasted brioche, beef tataki, or porcini risotto with grated mimolette.
Notable features
Domaine Boris Champy, in the Hautes-Côtes de Beaune, became the first estate in Burgundy to earn Demeter certification in 1984; the Demeter logo appears on the label. Champy took over the estate in 2019 from Didier Montchovet, after ten years at Dominus Estate in Napa Valley and a stint as estate director at Clos des Lambrays.
