About this wine

Character

A cool-toned Pinot Noir with juiciness, earthiness and plenty of freshness. The fairly translucent carmine red already hints at what the nose confirms: raspberry and wild strawberry, a touch of cherry and plum, along with stems, earth and gravel, lactic notes and, above that, a hint of violet and foliage.

Terroir and origin

Aux Coucherias lies just before Bouze-lès-Beaune. Boris Champy farms a west-facing parcel of this very steep premier cru vineyard, characterised by dark clay and limestone. His Clos Montchovet, isolated by trees and gorse, has been farmed biodynamically since 1985.

Grape variety and vinification

Pinot Noir from vines planted in the 1950s, with around 10,000 vines per hectare trained in Guyot. 55 percent whole clusters were planned; because the vintage brought botrytis, Champy destemmed completely, treated the stems with sulphur and layered them into a millefeuille of destemmed berries and stems. Ageing: twelve months in barrique.

On the palate

Sleek and energetic, with supple tannin and pronounced Beaune typicity. The tart fruit comes from cherry, barberry and sumac, accompanied by green yet ripe stem notes. At present, the 2021 still shows a touch of austerity.

Food pairings

Lamb chops on red lentils with oregano, cumin and turmeric, pulled pork vindaloo or braised green beans with datterini tomatoes, cardamom and garlic.

Special features

Magnum, 1500 ml, 12.5% vol., dry. The label carries the Demeter logo. Domaine Boris Champy was, in 1984, the first estate in Burgundy to be Demeter certified; Boris Champy took it over from Didier Montchovet in 2019.
