About this wine
Character
A Pinot Noir that clearly expresses the typicity of Beaune: juiciness, fruit, earthiness and, above all, freshness. The 2021 vintage comes across as sleek and energetic, cool and still a little austere at present.
Terroir and origin
The parcel faces west in Aux Coucherias, just before Bouze-lès-Beaune, very steep and on dark clay and limestone. The clos is shielded by trees and broom; at Boris Champy it is called Clos Montchovet. Champy knows the vineyard from his time at Louis Jadot. The site has been farmed biodynamically since 1985.
Grape variety and vinification
Pure Pinot Noir from vines planted in the 1950s, with around 10,000 vines per hectare trained in guyot. The vintage brought botrytis, so Champy fully destemmed the grapes, treated the stems with sulphur and layered a millefeuille of destemmed grapes and stems — 55 percent whole-cluster in the fermentation. This was followed by twelve months' ageing in barrique.
On the palate
Cool and juicy, with plenty of tart fruit from cherry, barberry and sumac. The tannin is silky, joined by green but ripe notes of stem. On the nose beforehand, raspberry and wild strawberry, a touch of cherry and plum, underpinned by stems, earth, gravel and lactic notes, topped with violet and foliage.
Food pairings
Lamb chops on red lentils with oregano, cumin and turmeric, pulled pork vindaloo or braised green beans with datterini tomatoes, cardamom and garlic.
Special features
Boris Champy took over the domaine from Didier Montchovet in 2019, which had already become the first winery in Burgundy to be Demeter-certified back in 1984. The label carries the Demeter logo. 12.5% vol., dry.
