About this wine
Character
The Beaune 1er Cru Aux Coucherias 2022 is a single-varietal Pinot Noir from one of Domaine Boris Champy's two Beaune Premier Cru plots, bottled in magnum. At 12.5 % vol it stays lean; its structure comes from acidity and tannin grain rather than extract.
Terroir and origin
The twelve-hectare estate lies in the Hautes-Côtes de Beaune around Nantoux and has been farmed biodynamically since 1984, making it the first winery in Burgundy to hold Demeter certification. Boris Champy, who spent ten years at Dominus Estate in Napa Valley, took over the estate from Didier Montchovet in 2019. Hedges, stone walls, orchards and sheep are part of the vineyard landscape, and the biodynamic preparations come from a self-built tisanière.
Grape variety and vinification
Pinot Noir, fermented spontaneously with natural yeasts, gently extracted and discreetly aged in oak. The estate's vine stock includes rare massal selections of pre-phylloxera vines, which lend complexity. The cellar intervenes as little as possible, so the variety's delicate fruit remains unobscured.
On the palate
Bright, translucent ruby red in the glass. The nose offers fresh wild strawberry, sour cherry and violet, underpinned by a cool, stony minerality. The palate entry is juicy and silky, the acidity lively, the tannin fine-grained; the fruit stays tightly focused and shows depth.
Food pairings
With pink-roasted duck breast, boeuf bourguignon or a veal chop with morels. Equally good with roast quail, venison, mushroom risotto, fine poultry and aged Comté.
Special features
The 1500 ml magnum allows the wine to mature more slowly. The label carries the Demeter logo.
