About this wine

Character

A brightly hued, cool-toned red wine at 12.5% ABV. The acidity carries the wine, the tannin stays fine-grained, and it comes across as light-footed without being thin.

Terroir and origin

Domaine Boris Champy is located in Nantoux, in the Hautes-Côtes de Beaune; its twelve hectares are spread across elevations ranging from 377 metres at Clou to 421 metres at Bignon. The altitude delays ripening and preserves the natural acidity. Hedges, stone walls, orchards and sheep define the surroundings of the vineyards.

Grape variety and vinification

A single-varietal Gamay. In the cellar, work follows a minimal-intervention approach: spontaneous fermentation with natural yeasts, gentle extraction, restrained use of oak. Alongside Gamay, the estate also grows Chardonnay, Pinot Noir and Aligoté, including rare massal selections from pre-phylloxera vines.

On the palate

Raspberry and sour cherry, along with a herbaceous nuance. The attack is cool and juicy, the mid-palate clean and free of excess weight, the finish dry.

Food pairings

Sautéed poultry liver, cold roast and charcuterie. Lightly chilled with Poulet de Bresse, braised veal cheeks or a mushroom tart. For cheese, mild Brie de Meaux and lightly aged Comté.

Special features

The estate was the first in Burgundy to gain Demeter certification, in 1984, and has been farmed biodynamically ever since; the Demeter logo appears on the label. Boris Champy took it over in 2019 from Didier Montchovet, after ten years at Dominus Estate in the Napa Valley under Christian Mouëix and a stint as estate director at Clos des Lambrays. The biodynamic preparations are supplied by a homemade tisanière.
