About this wine
Character
An herb-accented, fragrant Pinot Noir with dark fruit and a cool, vibrant streak. It could easily pass as a vin de soif, yet it's far from simple: acidity, ripe tannin and the proportion of whole clusters give it a good backbone for long development.
Terroir and origin
The grapes come from two parcels in Savigny-les-Beaune: Les Planchots, with white limestone soils on the edge of the alluvial fan in the Savigny valley, and Les Gollardes, a high-altitude parcel with flat, reddish-brown, stony soils.
Grape variety and vinification
Varietal Pinot Noir at 12.5% Vol. For the Petit Aigle négoce series, Boris Champy sourced organically grown, Ecocert-certified Pinot Noir, 70% destemmed, spontaneously fermented and gently extracted. Ageing lasted ten to twelve months in tonneaux, and the wine was bottled without filtration.
On the palate
In the glass, a fairly intense garnet red; on the nose, crisp plums, sour cherries, a touch of redcurrant and rose petals, alongside herbs, whole clusters and a hint of juniper. Approachable and juicy, the acidity linear, clear and present, the texture supple and accompanied by skilful oak use. The fruit feels ripe and round, the drive stays cool.
Food pairings
Beef entrecôte with baked potatoes and grilled green asparagus, smoked spareribs with grilled oranges, or mushrooms slowly braised and brushed with butter, served on farmhouse bread with Beurre Bordier.
Special features
The Domaine Boris Champy in the Hautes-Côtes de Beaune became the first winery in Burgundy to be Demeter-certified in 1984, and has worked biodynamically ever since. Petit Aigle is the second label, under Ecocert certification.
