About this wine
Character
A Pinot Noir that draws its strength not from density but from clarity: transparent fruit, a radiant character, and an acidity that carries the wine from start to finish. In the glass, a transparent ruby garnet, bright and clear.
Terroir and origin
The climat En Boeuf lies in the upper part of Pommard, on a full slope in the middle of a well-ventilated basin. The estate covers twelve hectares in the once-cooler Hautes-Côtes de Beaune, which Boris Champy sees as the future of Burgundy in the face of climate change. Here the grapes ripen a week later than on the Côte de Beaune, preserving their freshness.
Grape variety and vinification
Single-varietal Pinot Noir from low-trained vines in traditional high-density planting, 10,000 vines per hectare, pruned in simple guyot. Hand-harvested at optimal ripeness, then gently extracted with 70% whole clusters in wooden vats, spontaneous fermentation with native yeasts. Ageing lasts an average of twelve months, half of it in new barrels.
On the palate
The nose opens with small wild raspberries, cassis and mulberries, followed by earthy notes: undergrowth, sandalwood, dark cocoa and a touch of plum compote. On the palate, fine extract underlies the pronounced fruit impression, the ripe acidity runs through the wine to the ethereal, cool finish with its fruity, slightly bitter aftertaste. The tannins grip, but are polished and step back behind the acidity.
Food pairings
With pasta alla Norma, monkfish sauerbraten, or wild boar cutlets with caramelised onions and spring savoy cabbage.
Special features
Founded in 1984 by Didier Montchovet, the estate was the first Demeter-certified winery in Burgundy; Boris Champy took it over in 2019, after stints at Dominus in California, Louis Latour and Clos de Lambrays. Demeter logo on the label.
