About this wine

Character

A spicy, herbal Pinot Noir that is as transparent on the nose as it is in colour. Minimal extraction, little oak, but plenty of fruit: red and black berries, a touch of sour cherry, juniper and a floral streak.

Terroir and origin

The grapes come from two parcels in Savigny-les-Beaune: Les Planchots, with white limestone soils at the edge of the alluvial fan in the Savigny valley, and Les Gollardes, situated at altitude, with flat, reddish-brown, stony soils.

Grape variety and vinification

Pinot Noir from organic farming certified by Ecocert, which Boris Champy acquired for the Petit Aigle négoce series. As the vintage brought botrytis, he fully destemmed the fruit, treated the stems with sulphur, and then layered them with the destemmed berries in a millefeuille for fermentation. Fermentation was spontaneous with gentle extraction, ageing lasted ten to twelve months in tonneaux, and the wine was bottled unfiltered.

On the palate

Juicy and transparent, with red and dark berries and a touch of sour cherry. The tannin is fairly firm, the acidity lively, the body lean. Alongside the fruit there is a slightly earthy note and an aroma reminiscent of Cointreau.

Food pairing suggestions

With steak frites, sirloin skewers with sumac and black lime and, for a vegetarian option, grilled confit parsnips with garlic, herbs and chilli.

Special features

In 2019, Boris Champy took over the storied estate of Didier Montchovet in the Hautes-Côtes de Beaune, the first estate in Burgundy to be Demeter-certified in 1984 and biodynamic ever since. The second label, Petit Aigle, is Ecocert-certified.
