About this wine
Character
A dry Chardonnay from the Côte de Beaune that carries both volume and freshness in equal measure: lemon, pear and a cool touch of flint, at 13.0 % Vol.
Terroir and origin
The grapes grow mainly in unclassified plots at the top of the Saint-Romain hill. The appellation reaches up to 400 metres in altitude, nights stay cool, ripening takes its time, and the chalky soils shape the acid structure. A further part of the fruit comes from fellow, equally organically certified winegrowers in Pouilly-Fuissé.
Grape variety and vinification
Pure Chardonnay from vines around 40 years old. About half the grapes were destemmed before pressing. Ten to twelve months' ageing in barriques and tonneaux of 228, 350 and 500 litres, of which at most 10 % are replaced each year, plus WineGlobes and concrete eggs. The wine was tasted and racked daily, whenever Frédéric Buisson deemed it sensible. Fined with bentonite, only very lightly filtered, sulphured only at bottling with at most 40 to 50 mg/l total sulphite.
On the palate
Good volume, plenty of fruit and fine spice, lemon and lime, stone and herbs, a touch of vanilla from the wood. The polished acidity and the length make the difference.
Food pairing suggestions
With trout in almond butter, pikeperch fillet and poultry in a light cream sauce, as well as with goat cheese or a green asparagus risotto.
Special features
The Buisson family farms 13 hectares in Saint-Romain, Santenay and Beaune biodynamically; Henri introduced this practice in 1990. The daily taste during ageing decides the treatment of each barrel individually.
