About this wine

Character

This Pinot Noir is a Hautes-Côtes de Beaune of great freshness and clarity, grown in the high-altitude sites around Nantoux. In the glass, a medium-translucent crimson; on the nose, juicy sour cherry, black cherry, mulberry and dark raspberry, along with foliage, warm forest floor, warmed dark chocolate with barberry and a touch of clove from the oak.

Terroir and origin

The grapes come from two parcels: En Bignon in Bouze at 421 metres and Le Clou in Nantoux at 377 metres. The soils are defined by red clay and by white clay with a high marl content. The altitude extends ripening and preserves freshness, an advantage in warmer vintages.

Grape variety and vinification

Pure Pinot Noir. Some of the vines were already planted in the 1980s, with a planting density of over 10,000 vines per hectare, trained partly in Guyot, partly in lyre. Boris Champy fermented 50% whole clusters, spontaneously with the estate's own yeasts, extracted gently, and aged the wine for twelve months in foudre, 15% of it in new oak.

On the palate

The wine is round upfront; toward the mid-palate and into the finish, tannin, structure and drive emerge, carried by present acidity. The ripe, juicy red and dark fruit is joined by a touch of pepper, hints of stem and elegant oak. Two to three years in the cellar will benefit it.

Food pairings

With boeuf bourguignon, roast duck breast, jugged hare, mushroom risotto or roast quail.

Special features

The domaine became the first winery in Burgundy to be Demeter-certified in 1984 and has worked biodynamically ever since; Boris Champy took it over from Didier Montchovet in 2019. 12.5% Vol., dry.
