About this wine

Character

This Chablis comes across as elegant and refined, transparent and clear, then noticeably more powerful on the palate than the nose suggests. Vinified dry, 13.0% vol., with plenty of energy and a freshness that carries through to the finish.

Terroir and origin

The grapes come from more than 15 hectares of vineyards around the villages of Chablis, La Chapelle, Fontenay and Beine. The soils are calcareous, characterised by Kimmeridgian and Portlandian limestone. In 2016, Romain and Damien Bouchard carried on their family's legacy as Domaine de l'Enclos, retaining 29 hectares of vines averaging 30 years old, with some over 50.

Grape variety and vinification

Pure Chardonnay, hand-harvested. After picking, the grapes are pressed directly, the must ferments spontaneously in stainless steel tanks, and the wine is then aged in the classic multi-year oak barrel. Before bottling it is lightly filtered and sulphured. In the gravity cellar, 450 square metres underground, gravity replaces pumps.

On the palate

The wine coats the palate while remaining fragrant and citrusy: lemon sorbet, lime and white currants, along with garden herbs, petrichor and a touch of yeast. The texture is polished and slightly chalky, the extract sweetness fine. With air it gains tension, citrus brightness and piquant zesty notes.

Special features

Bottled in the 1500 ml magnum. The estate has been farmed entirely organically since 2015, and since 2017 biodynamic principles have shaped the work: hand-harvesting, organic compost on the soils, wild yeasts in the cellar, no fining. The brothers are based in a 19th-century estate in the heart of Chablis, once home to the monks of Pontigny.
