About this wine

Character

The Chablis "Le 2024" is the only wine that Domaine de l'Enclos produced in this vintage: a Chardonnay that speaks of salinity and citrus from the very first moment. Clear, taut and unpolished.

Terroir and origin

Chablis in Burgundy, with vines rooted in Kimmeridgian limestone. Adverse weather conditions severely affected the vineyards in 2024; what remained was brought together into a single cuvée uniting all the terroirs on the right bank of the Serein, a blend without precedent in the estate's history. Romain and Damien Bouchard farm their 29 hectares organically, with biodynamic principles woven into their work since 2017, and harvest by hand. The vines average 30 years of age, with some over 50.

Grape variety and vinification

Chardonnay, vinified in the estate's gravity-flow cellar, where across 450 square metres underground, gravity replaces every pump. Fermentation is carried out by wild yeasts. The wine was aged for 16 months in a single 450-litre barrel, unfined and only gently filtered. 12.5% vol., dry.

On the palate

On the nose, salty lemon, oyster shell and green apples, joined by an Atlantic briny note and a yeasty streak reminiscent of porridge. The palate stays true to this line: powerful, vibrantly fresh, with citrusy yellow and green notes, subtle phenolics and a fine texture.

Special features

Only this single barrel exists from this vintage. Domaine de l'Enclos was founded in 2016, when Romain and Damien Bouchard took over the family vineyards and started afresh at a 19th-century estate that once belonged to the monks of Pontigny.
