About this wine

Character

A fresh, juicy Bourgogne Rouge that, in the 2021 vintage, carries rather dark notes. Romaric Chavy has guided the red wines of Domaine Chavy-Chouet towards a clearly structured style that holds power, fruit and finesse together.

Terroir and origin

La Taupe is a very old two-hectare vineyard located right next to Château de Pommard. The vines have stood there for 70 years. The Pommard origin remains recognisable in the glass: a slightly wild, earthy and pleasantly rustic note accompanies the fruit.

Grape variety and vinification

Pure Pinot Noir, originally planted at 10,000 vines per hectare. The wine matured for ten months in Burgundian pièces with a 10% proportion of new oak, a considered use of wood that frames the fruit rather than masking it. 12.5% vol., vinified dry.

On the palate

Open, clear and as acid-driven as one would expect from a 2021. Dark berries, black cherry and sour cherry carry the fruit, joined by wild strawberry and cranberry. Beneath lie earthy, spicy notes with a hint of undergrowth, giving contour to the juicy, easy-drinking flow.

Special features

Romaric Chavy has run the domaine since 2014 together with his wife, as a seventh-generation winegrower. The vines, up to 70 years old, have been farmed without herbicides for over 30 years and are now cultivated organically. That this wine, carrying the simple Bourgogne appellation, comes from a single Pommard parcel is something you can taste in this Pinot Noir.
