About this wine
Character
The Coteaux Bourguignons Gamay Fin AOP 2023 shows Gamay in a particularly fresh style, owed to its high-altitude sites. The wine still feels very young, remains consistently clear in expression and favours juiciness over weight.
Terroir and origin
The grapes come from three parcels in the Hautes-Côtes de Beaune. The vineyards of Domaine Boris Champy lie between 377 metres at Le Clou and 421 metres at Le Bignon; at this altitude, the grapes ripen a week later, which preserves natural freshness and elegance. Around Nantoux, the landscape is shaped by hedges, stone walls, orchards and sheep.
Grape variety and vinification
Gamay from various old massal selections, planted at 10,000 vines per hectare and trained in Guyot. Boris Champy fermented around 50% whole clusters in carbonic maceration; fermentation took place spontaneously in a wooden vat, with a short nine-day maceration. The wine then aged for around twelve months in an old pièce and in foudre.
On the palate
On the nose, juicy cherries, wild strawberries and plums, along with yeast, pepper, a touch of undergrowth and saddle leather. On the palate, crisp, fresh and fine, with lively acidity, juicy fruit and a herbal and mineral spice. Add to that salt and pepper, a touch of wood and vanilla. The tannin is round and provides structure without becoming dominant.
Special features
Boris Champy took over the estate from Didier Montchovet in 2019; it has been farmed biodynamically since 1984. A self-built tisanerie supplies the preparations, and the vinification relies on spontaneous fermentation with natural yeasts, gentle extraction and restrained use of wood. The Demeter logo appears on the label. 12.5% vol., dry.
