About this wine

Character

When young, the Cottá is reserved and only opens up with plenty of air. It then reveals aromas of black and sour cherries, bitter almond, rosehip and pomegranate, along with a touch of sloe and plum, black tobacco, earth and leaves, mocha and iodine. A slightly reductive note is part of this stage of its development.

Terroir and origin

The Nebbiolo comes from the Cottá vineyard in Neive, where Rino Sottimano acquired the estate in the late 1960s. The vineyard has been farmed organically since the 1970s, with an average yield of 15 hl/ha.

Grape variety and vinification

Single-varietal Nebbiolo. The fruit was destemmed and fermented on the skins for up to 60 days, in open stainless-steel fermenters, with the cap punched down regularly during fermentation. Fermentation happens spontaneously, without filtering or fining. Since the 2020 vintage, the wine ages for around 24 months in large, slightly conical botti.

On the palate

Firm, ripe and present tannins meet a vibrant, clear acidity. Add to that dark berries, cherries and sea buckthorn, a touch of salt and a taste of forest and undergrowth. What this wine shows today is excellent; it saves most of itself for later.

Food pairings

Ossobuco milanese all'autunno, rabbit roulades with sage and chilli and, for a vegetarian option, brown chanterelles with pumpkin and polenta gnocchi.

Highlights

14.5% vol., dry. Malolactic fermentation runs without a heated tank: it begins when the cellar naturally warms up in spring and can continue into autumn. Andrea, Elena and Claudia Sottimano run the estate, which spans nearly twenty hectares.
