About this wine
Character
The Cottà is the single-vineyard Barbaresco from the very site where Azienda Agricola Sottimano itself is based. It shows structure and fruit in equal measure, with oak never taking the lead. Bottled as a magnum, it ages more slowly than in a standard bottle. 14.0% vol., dry.
Terroir and origin
Cottà lies in the municipality of Neive. Here Rino Sottimano acquired the estate in the late 1960s and planted the vineyards himself during the 1970s and 80s; many vines are now fifty to sixty years old. Nebbiolo grows across nearly twenty hectares, spread over five single vineyards. Cottà yields wines with red and black fruit.
Grape variety and vinification
Nebbiolo, spontaneously fermented with wild yeasts from the vineyard and cellar. Maceration on the skins can last up to sixty days, where elsewhere pressing happens after two to three weeks. Malolactic fermentation only begins once the cellar warms naturally in spring, and can stretch into autumn. Bottled unfiltered and unfined. The vineyard has been farmed organically for over forty years, without herbicides or synthetic fertilizers.
On the palate
Red cherry and rosehip, with violet and dried roses, underscored by liquorice, tar and tobacco. Fine acidity, silky, precise tannins, long finish with an earthy note.
Food pairings
Brasato al Barolo, braised veal cheeks, tajarin with white truffle, venison haunch, aged Parmigiano Reggiano or Taleggio.
Special features
1500 ml magnum. The winery is now run by Andrea, Elena and Claudia Sottimano.
