About this wine
Character
The Cuvée 3A is a Grand Cru Champagne made from Chardonnay and Pinot Noir, drawing its density from three villages and ageing in magnum. Round and full-bodied, homogeneous, with a supporting bitterness and an acidity that holds everything together.
Terroir and origin
The name reveals its origin: Avize on the Côte des Blancs, together with Aÿ and Ambonnay, all three Grand Cru. The house, based in Avize, cultivates 9.5 hectares, with an average vine age of over 45 years. Erick De Sousa converted to organic farming in the late 1990s, followed by organic certification in 2010 and Demeter recognition in 2013. Today, Charlotte, Valentin and Julie De Sousa run the estate.
Grape variety and vinification
A blend of Chardonnay and Pinot Noir. Oak barrels are used in the cellar, not for wood aromas but for texture and depth. Ageing takes place in the cellars carved into the chalk, where a constant 10 °C lets the wine develop slowly. 12.5% vol., made in a dry style.
On the palate
The entry is soft, the fruit ripe and juicy, the mousse fine-beaded and mouth-filling. Beneath that lie citrus oil, cherry and raspberry, a distinct touch of umami and dense extract sweetness. The nose provides the contrast: citrus fruit and star fruit on the opening, orange oil as an accent, plum cake and cinnamon blossom for the darker depth.
Food pairings
With a pointed cabbage terrine with black walnuts and roasted rye crackling, mackerel poached in a black cardamom broth with enoki mushrooms, or a venison terrine with dried cranberries and pistachios.
Special features
The Demeter logo appears on the label. The magnum format gives the Champagne more time in the bottle.
