About this wine
Character
A Champagne with drive and depth that carries its power with discipline. The Réserve Perpétuelle, replenished with new wines every year since 1995, gives it aromatic complexity, while its saline, chalky minerality keeps the line straight.
Terroir and origin
The grapes come from Grand Cru sites in the Côte des Blancs, mainly from Avize, where the De Sousa house has been established since the 1950s. The vines average 60 years of age and root deep into the chalk. Ploughing is done with the horses Vidoc and Capucine to avoid soil compaction and support soil fauna.
Grape variety and vinification
100% Chardonnay, hand-harvested and spontaneously fermented with indigenous vineyard yeasts. Ageing takes place entirely in 228-litre oak barrels with around 8% new wood, without fining or filtration. About 50% of the wine comes from the Réserve Perpétuelle, the base vintage is 2020, tirage took place in 2021, and disgorgement in 2025. Dosage is around 5 g/l.
On the palate
The entry is silky, the mousse creamy and broad. The phenolic structure then takes hold, contouring the edges of the tongue and building tension with good pressure. On the nose, tan-toasted, salted buttered toast, oven-baked yellow apple and salted hazelnuts and cashews, underscored by dried summer and hay flowers and wet chalk.
Food pairings
Scallops in beurre blanc, turbot with sea salt and aged Comté.
Special features
De Sousa switched to organic farming as early as the late 1980s, followed by organic certification in 2010 and Demeter certification in 2013; the Demeter logo appears on the label. The cellars, carved into the chalk, maintain a constant 10 °C.
