About this wine

Character

The Chablis Grand Cru Les Clos 2022 comes from a parcel at the historic heart of the climat and still appears closed in its youth. The colour is a pale golden yellow. On the nose it remains shy, typical of this site: subtle smokiness, citrus zest, white blossom, along with a touch of melon, ripe pineapple and a hint of mango. Even after hours in the decanter, it reveals little.

Terroir and origin

In the Grand Cru Les Clos, brothers Romain and Damien Bouchard own 0.67 hectares in the lower part of the slope. Their grandfather planted the parcel in 1967. The vines are rooted in Kimmeridgian limestone, the fossil-rich limestone typical of Chablis.

Grape variety and vinification

Pure Chardonnay, hand-harvested and slowly pressed as whole clusters. Fermentation happened spontaneously in used tonneaux, where the wine was also aged. The process concludes with a coarse filtration and light sulphuring. Work takes place in the 450-square-metre gravity-flow cellar, which operates without pumps.

On the palate

More open and inviting than on the nose, with a silky, creamy, almost velvety texture. The wine then turns more austere and piquant, more citrusy and demanding, gains depth, plays with a touch of tannin and becomes more saline and energetic, without losing its charm. A few years of bottle ageing will add further complexity.

Food pairing recommendations

Poulet à l'Estragon, creamy polenta with winter truffle and egg, and sole with beurre noisette, lemon purée and North Sea shrimp.

Notable features

Romain and Damien Bouchard founded Domaine de l'Enclos in 2016, after selling the family négociant business while keeping the 29 hectares of vineyards. They have farmed organically since 2015, and since 2017 biodynamic principles have shaped their work: organic compost, hand-harvesting, wild yeasts, up to 18 months on fine lees, no fining.
