About this wine
Character
A Blanc de Blancs that holds both richness and structure at once: creamy texture on one side, a saline chalky note and taut structure on the other. Power and drive are present, yet the Champagne remains disciplined throughout.
Terroir and origin
The grapes come from Grand Cru sites in the Côte des Blancs, mainly from Avize, where the family estate has been based since the 1950s. The vines have stood in the chalk for 60 years on average. Erick de Sousa converted to organic farming as early as the late 1980s; the estate has been Demeter-certified since 2013. Ploughing is done with the horses Vidoc and Capucine to avoid soil compaction and encourage deeper rooting. The cellars are cut into the chalk and hold a constant 10 °C.
Grape variety and vinification
100% Chardonnay. Around 50% of the cuvée comes from the Réserve Perpétuelle maintained since 1995, with the base vintage from 2020, tirage from 2021, and disgorgement in 2025. Hand-harvested, spontaneous fermentation with the vineyard's own indigenous yeasts, full ageing in 228-litre oak barrels with around 8% new oak. Bottled unfiltered and unfined, with a dosage of around 5 g/l.
On the palate
The fine mousse spreads silkily and broadly, the texture almost melting. Then the elegant phenolic structure takes hold along the edges of the tongue, sharpening the line and building pressure. Aromatically layered and deep, carried by the reserve wines.
Food pairing recommendations
With scallops, with pan-fried turbot with butter sauce, and with aged Comté.
Special features
The 1500 ml Magnum format allows this Champagne to age especially slowly. 12.5% vol.
