About this wine

Character

A vintage Champagne of baroque构 build: dense, generous, carried by mellow maturity. The aromatics are richly interwoven, yet the wine remains clearly defined and never heavy.

Terroir and origin

The grapes grow in Le Mesnil-sur-Oger, a Grand Cru commune in the Côte des Blancs. The De Sousa house in Avize farms 9.5 hectares across Avize, Cramant, Oger and Le Mesnil-sur-Oger, Demeter-certified since 2013. Erick De Sousa began the conversion in the late 1990s; today Charlotte, Valentin and Julie De Sousa run the estate. The cellars are cut into the chalk and hold a constant 10 °C.

Grape variety and vinification

Pure Chardonnay from vines over 60 years old. Spontaneous fermentation with wild yeasts in wood, regularly stirred on the lees (bâtonnage); the house uses oak barrels for texture and depth, not for oak flavour. Bottled unfiltered on 10 July 2014, disgorged on 29 November 2022 with a three-gram dosage, making it Extra Brut.

On the palate

Creamy on entry, the mousse fine and sparkling. Honeycomb, quince jelly and dried yellow pear return from the nose, joined by candied ginger and a saline note of fresh oyster. Full in extract, beautifully defined, with a length that lives up to the cuvée's name. The mellow texture calls for a large all-purpose glass.

Food pairings

Crostini with goat cheese, yellow beetroot, propolis and salted hazelnuts, lobster with chilled tarragon-vinegar melon, or guinea fowl glazed with honey, rosemary and garlic, served with oven-roasted thyme potatoes.

Special features

The wine rested in the chalk cellars for more than eight years after bottling in July 2014 before being disgorged. The label bears the Demeter logo. 12.5% ABV.
