About this wine
Character
A Brut that gets straight to the point: pale golden yellow in the glass, on the nose first citrus fruit and almonds with a trace of fermented Boskop apple. With air it becomes more yellow-fruited, underscored by chalky notes and a hint of jasmine.
Terroir and origin
De Sousa farms 9.5 hectares in Avize, Cramant, Oger and Le Mesnil-sur-Oger, all Grand Cru sites in the Côte des Blancs. The average vine age is over 45 years. The cellars are cut into the chalk and hold a constant 10°C, which slows the ageing process. The conversion to organic farming began in the late 1990s, followed by organic certification in 2010 and Demeter recognition in 2013.
Grape variety and vinification
50% Chardonnay, 40% Pinot Noir, 10% Meunier. Erick De Sousa was an early adopter of oak barrels for vinification in Avize, not for oak aromas but for texture and depth. The dosage is seven grams.
On the palate
Present and forceful, the fruit bright and clear: white peach, nectarine, apple and citrus, joined by creamy hints of lemon meringue and wine froth. The dosage goes unnoticed, the champagne comes across as dry and stays balanced through to the mineral-tinged finish.
Food pairings
With langoustine with fennel, apple and elderflower, with char with nori and quail eggs, or as a vegetarian option with yellow beetroot with pear and fresh goat's cheese.
Special features
The double magnum holds 3000 ml; larger bottles age more slowly. Erick De Sousa became the pioneer of biodynamic champagne, and today the house is led by Charlotte, Valentin and Julie De Sousa.
