About this wine
Character
A Sauvignon Blanc from Southern Styria in concentrated form: ripe fruit, acidity that carries it, and the chalky coolness of the limestone soils. The late bottling, meaning bottling after extended ageing in the cellar, has given the 2021 vintage depth without robbing it of freshness.
Terroir and origin
The Tement winery is located in Ehrenhausen. Manfred Tement took over the estate in 1976 with three hectares; today it comprises almost 100 hectares on the steep slopes on both sides of the Slovenian border. The limestone-rich soils shape the style: wines of tension and structure. Since 2005, son Armin has worked at the estate, responsible for viticulture and cellar; Stefan joined in 2010.
Grape variety and vinification
Pure varietal Sauvignon Blanc, dry, 12.5% vol. Restraint dominates in the cellar: spontaneous fermentation, extended lees ageing, and the careful use of large wooden casks.
On the palate
Deep golden yellow with greenish reflections. On the nose, ripe gooseberry, blackcurrant and white peach, underscored by herbs and a smoky spiciness. Dense and layered, with vibrant acidity and saline minerality in the long finish.
Food pairings
With pan-fried turbot with wild garlic butter or with beurre blanc, saddle of veal with morel jus, Styrian fried chicken with potato salad, cured char, asparagus with hollandaise sauce and mature hard cheese.
Special features
The double magnum holds 3000 ml; in this large format the wine matures more slowly. The conversion to biodynamic farming began in 2017, and the estate is a member of Respekt-BIODYN. In 1986, Manfred Tement founded the quality initiative Steirische Klassik (STK) together with like-minded winegrowers.
