About this wine

Character

A Crémant that feels mature rather than lean. On the nose, rich yellow fruit, yeasty notes and a touch of burnt sugar, meant purely as an aromatic note rather than sweetness. Alongside this, wax, ripe citrus and a hint of stone.

Terroir and origin

Domaine Boris Champy is located in Nantoux in the Hautes-Côtes de Beaune and covers twelve hectares, with plots ranging from 377 metres at Clou to 421 metres at Bignon, along with sites in Pommard and two Beaune Premier Crus. At these altitudes the grapes ripen late, which preserves natural freshness and elegance. Hedges, stone walls, orchards and sheep shape the land around the estate.

Grape variety and vinification

Single-varietal Aligoté, with secondary fermentation in the bottle. Extra Brut means the dosage is kept sparing, the wine remains dry at 12.5% ABV. In the cellar, the approach is minimal-intervention, with spontaneous fermentation from natural yeasts, gentle extraction and restrained use of wood. The biodynamic preparations come from a self-built tisanière.

On the palate

Ripe, yellow-fruited, juicy and full-bodied, carried by a lively perlage. Mealy apple and a touch of caramel add warmth without weighing the wine down. The finish remains dry.

Distinctive features

The estate was the first in Burgundy to be Demeter-certified in 1984 and has worked consistently biodynamically ever since; the Demeter logo appears on the label. Boris Champy took it over in 2019 from Didier Montchovet, after ten years at Dominus Estate in the Napa Valley, a stint as estate director at Clos des Lambrays, and a pilgrimage to Santiago de Compostela. Aligoté as the basis for a Crémant is the exception, here it's the whole point.
