About this wine

Character

A densely built cava, whose long bottle ageing has given it an aromatic profile of brioche, roasted nuts and dried fruit, without the acidity losing any tension. The bubbles are fine and long-lasting, the overall stature calm and serious.

Terroir and origin

The vines grow around Sant Sadurní d'Anoia in the Penedès, on soils of limestone and fossil deposits. The Batlle i Gramona family has farmed the estate since 1850 and converted all 150 hectares to organic farming in 2000. The vineyard is managed as a living ecosystem, with every intervention made deliberately.

Grape variety and vinification

The cuvée combines Xarel·lo and Macabeu, the two classic Penedès varieties. The wine ferments in the bottle using the méthode champenoise and then spends a very long time ageing on the lees in the estate's underground cellars, which hold more than four million bottles. As a Brut Nature, it is released without dosage, at 12.0% vol.

On the palate

Creamy and powerful, with a texture that carries the wine while its chalky freshness keeps it upright. The finish remains long and saline.

Food pairings

With pan-seared scallops, with oven-roasted turbot with sea salt and olive oil, with fine fish in a creamy sauce. It also pairs well with Jamón Ibérico de Bellota and an aged Manchego.

Special features

The label carries the Demeter logo. Gramona was among the first estates in the Penedès to convert its entire vineyard to organic farming, long before it became common practice there.
